This week we’re putting chef, Adam Drew, into the spotlight!
Adam is one of the more experienced chefs at Richmond Painswick, with a
background in hotel kitchens. Adam is originally from Poland now living in
Cheltenham with his wife and two sons. Adam likes to spend time at home smoking
sausages and ham and is currently making some wine that we are all looking
forward to trying! Adam’s favourite dish on our winter menu is simple but
classic - the BBQ chicken. Chicken breast stuffed with melted cheddar cheese,
wrapped in smoked streaky bacon and smothered with BBQ sauce, best served with
chips and peas. Sound delicious? Here’s how you can make Adam’s favourite at home…
For the BBQ sauce

Fry the onions garlic in the oil until lightly browned, then add the other ingredients.
Bring to a boil and then simmer until thick.
Allow to cool slightly then blitz until smooth.
For the chicken

Pre heat the oven to 180°C.
For this, Adam recommends you butterfly the chicken breast –
On a chopping board carefully slice down the rounded edge of
the breast but don’t cut it all the way through. Then open it up to look like a
butterfly. Place the cheese in the middle then fold back over and slightly tuck
the chicken under the cheese, this will stop all the cheese oozing out.
Next wrap the bacon around the chicken tightly, season with
salt and pepper, drizzle with oil then place into the oven for roughly 30 mins.
Remove from the oven and pop it on a plate, smother in the BBQ sauce you prepared earlier and serve with chips and peas.
